Our Story

A long time ago in a galaxy far, far away…
No, but really, back in 2007 the initial idea behind Skinny Pig Pizza sprang from the mind of co-owner and executive chef, April McMahon, and her desire to stay fit, healthy and happy. She wanted more than just a diet that would ultimately fail, she wanted a lifestyle. She went high protein, low-carb and full steam ahead.

Today, this mom of eight kids (you read that right) lives the low-carbohydrate life and reaps the benefits. People constantly ask her “what’s your secret for staying skinny after all those kids?” which is one of the reasons she wanted to take a family recipe and make it a public phenomenon. She wants to provide an alternative to healthy eating that actually tastes good. Her philosophy is that good food doesn’t have to taste bad.

In addition to low-carbohydrate, our food is also gluten-free. Eating right doesn’t have to be a compromise. Here, you can literally have your cake and eat it, too!
